Cashew Cheese Sauce

  • Soak cashews for 2-3 hours prior, drain.
  • Add to processor/blender with water and seasoning, blend.

Chipotle Mayo

Veganaise
Chilli Powder, Cumin, Cayenne, Garlic Powder, Coriander, Thyme, Chipotle Pepper

Alternatively mixing Chipotle sauce with Veganaise is a quick way to make a delicious creamy sauce.

  • Combine Veganaise and seasoning or chipotle sauce in small bowl, mix with spoon.

Cilantro Jalapeno

Apple Cider Vinegar

  • Finely dice garlic, cilantro and jalapeno. Combine veganaise, lime juice, vinegar and prepared ingredients in a small bowl.

Guacamole

Avocado
Red Onion
Cilantro
Lime Juice
Salt & Pepper

  • Finely dice red onion and shred cilantro. Halve avocado, remove pitt and spoon the flesh into a bowl. Mash avocado with a fork, add prepared ingredients, finish with adding lime juice and seasoning.

Hummus

1C Chickpeas
1/2 Lemon
4 Garlic Cloves
Olive Oil
1 TBSP Tahini
Salt & Pepper, 1 TSP Cumin, 1 TSP Paprika

  • Soak chickpeas overnight if dried and cook for one hour prior to making hummus.
  • Combine olive oil, tahini, lemon, garlic and seasoning in blender. Blend well.
  • Add chickpeas, blend until smooth consistency.

Kale & Basil Pesto

1 Small handful Kale
1/2 bunch basil
1 TBSP Tahini
1/2 Avocado
1/2 Cup Nutritional Yeast
1/4 Lemon
Salt, Pepper

  • Blanch kale in water, add all ingredients to nutri-bullet/blender with 1/4c water. Blend until smooth then stir through cooked pasta.

  • Combine ingredients in processor/blender, transfer to a jar and refrigerate.

Spiced Mediterranean Pumpkin Dip

Pumpkin

Cumin, Cayenne, Salt & Pepper

  • Boil pumpkin, while cooking add remaining ingredients into a processor/blender. Add pumpkin once cooked and blend well.

  • Finely dice tomatoes, red onion, peppers and shred cilantro. Combine well in bowl, stir in ketchup, sriracha and seasoning.

Sweet Chilli 'Philly'

Sweet Chilli Sauce
Cream Cheese

  • Spoon cream cheese into bowl, drizzle sweet chilli sauce on top.

Sweet Paprika Mayo

  • Combine all ingredients in a bowl.

Mexican Layer Dip

Kalamata Olives
Avocado or Guacamole
Red Onion
Lettuce
Tomato
Tomato Salsa
Kidney Beans
Lime
Cheese
Tofutti Sour Cream or Veganaise
Salt & Pepper

  • Cook red kidney beans for an hour if dried, then mash in a bowl. In a serving dish, layer mashed beans on bottom then add guac or mashed avocado with lime juice, layer veganaise or sour cream, layer salsa and season, diced tomato, red onion and top with cheese and olives.
